You love Thanksgiving, but that turkey sandwich you’re forced to make every year to use up those leftovers? Well, it’s starting to feel a little stale. Friends, meet a little recipe I like to call Thanksgiving leftover nachos, the unsung hero of the holiday season. Imagine all of your favorite Thanksgiving foods artfully piled on top of a bed of crispy tortilla chips, and then smothered in layers and layers of beautiful, melty cheese. Honestly, I’m beginning to wonder why I even bothered with Thanksgiving dinner at all. Next year, let’s skip straight to the fun part.

Of course, nachos are a crowd-pleaser all year long, but there’s just something about loading up a chip with turkey, stuffing, and mashed potatoes that seems particularly fitting as a followup to the meal you downed the day before. Want to get really fancy? Drizzle the whole thing with a zesty salsa verde gravy sauce, and then sprinkle on some dried cranberries as colorful garnish. It’s a well-known fact that cheese makes everything taste better, so experiment with as much of it as you want. We used white cheddar for this particular nacho plate, but why limit yourself? As is the case with all nachos, you can easily customize this dish to meet your specific tastes, so grab whatever ingredients you want, and get to work. As history has shown us time and time again, nachos are never a bad idea.
