This summer, treat yourself to a boozy popsicle that truthfully is socially acceptable to eat at all times of the day. I'm not kidding. Breakfast, lunch, dinner, after work — these strawberry champagne popsicles will be calling your name all season long. Not that this is a bad thing! After all, you have to cool down one way or another, and if you ask me, there's no better way to do this than with a snack that won't just refresh you, but will help you get your fix of bubbly. Basically, it's the perfect summertime treat.
Make these for a summer barbecue, or for laying by the pool on long, lazy weekends. Either way, these icy treats are exactly what you need this summer. These only take about 20 minutes to make, and the hardest part may be having the patience to wait until they freeze so you can gobble them up. Pro tip: make them Monday morning before work, so you can enjoy them as soon as you get home, and throughout the week. Consider it a yummy twist on happy hour.
Disclaimer: these awesome popsicles are for the 21-and-older crowd only. Sorry, kids! Under 21? Try these non-alcoholic versions instead.
- 1/2 cup water
- 1/2 cup sugar
- 1 cup champagne
1. Over medium heat, combine sugar and water. Stir constantly until boiling begins. Continue stirring until sugar completely dissolves.
2. Let the mixture cool. Finely chop two strawberries. Option 1: To achieve strawberries mixed into your popsicle, just add in strawberries and stir. Option 2: To achieve strawberries at the bottom of your popsicle, set strawberries aside for now.
3. Add champagne into the sugar water, and stir. Pour it into the popsicle mold until 3/4 full. Add in your popsicle sticks, and freeze for four hours. Option 2 continued: Combine strawberries with two tbsp. water. Pour the strawberry water into the top of the popsicle mold.
4. Freeze overnight, and enjoy!
