Here’s the thing about eating vegan: it’s not nearly as scary or as difficult or as annoying as non-vegans make it out to be. It might take a little bit of extra planning, but more often than not, eating vegan is a non-issue. Whether you are vegan or not, you’re going to enjoy these vegan spring recipes.

If you have been debating about going vegan, there’s no better time than the present — especially during the spring season. As the winter dissipates, more and more vegetables are in season, making vegan dishes even more delicious. “The more vegetables, the merrier,” as many vegans say, I assume?

Admittedly I am not a vegan, but I am familiar with (and often prefer) plenty of vegan meals. Honestly, vegan dishes are just more fun than any baked chicken dish I can think of. In fact, one of the best things about eating vegan is how creative you can become with so many foods you thought you knew. You can turn cauliflower into pizza crust! You can turn beets into burgers!
