12 Pumpkin Breakfasts That Will Get You Out Of Bed

by Meghan Bassett

Waking up in the morning is hard enough as it is. Aside from trying to resist hitting the snooze button for the 10th time in a row, you have to get ready and, more importantly, eat breakfast before rushing out the door. The only thing that works for me, particularly during “pumpkin everything” season, is the thought of delicious pumpkin breakfast recipes waiting for me at the table.

Food is the only reason I’ll get out of bed. Really. If there is no promise of food in the very near future, I have to be forcibly pulled out of bed. Otherwise, I am clinging to every sleepy minute I can. It might sound a little extreme, but my stomach is the only thing that can force me to throw the covers back, and leave the comfort of my bed.

I can’t even begin to tell you how happy I am to have pumpkin season back in my life. Pumpkin is literally giving me a solid reason for getting out of bed every day. Waking up to the scent of pumpkin filling the air is my most cherished memory of fall. That’s why I’m rounding up my favorite pumpkin breakfasts that will make you want to get out of bed in the morning.

1. No-Knead Pumpkin Rolls With Brown Sugar Glaze

Just look at that gooey glaze oozing off of this pumpkin roll… These no-knead pumpkin rolls from The Kitchn are the perfect wakeup call. You can practically taste the soft, pumpkin-packed dough, can’t you?

2. Pumpkin Bread With Walnuts

Considering how lazy I can be, a sweet slice of pumpkin bread from Joy the Baker is my lazy morning solution. You can make it over the weekend, and continue to eat it throughout the week, assuming it lasts more than one day. Of course, it probably won’t — let’s be real.

3. Pumpkin Pecan Scones With Maple Glaze

My grandmother used to make the best scones, but she never made them with pumpkin, which was always a tragedy in my mind. Cookie + Kate’s pumpkin pecan scones with that maple glaze look like the ideal pairing for your morning cup of coffee.

4. Oatmeal To-Go Pumpkin Chocolate Muffins

Need breakfast to-go? That’s the story of my life, considering I am perpetually running five minutes behind to everything. These pumpkin chocolate muffins from Averie Cooks are the pumpkin grab-and-go breakfast that will keep you and the kiddos satisfied well into the morning.

5. Pumpkin Ricotta Pancakes

What could make pumpkin pancakes better? Smooth and creamy ricotta, that’s what. Pumpkin ricotta pancakes from I Am A Food Blog are the light and fluffy pancakes you’ve been craving since September rolled around.

6. Pumpkin Fritters

Give me something fried, and I’ll give you a gigantic smile in return. If it just so happens to be fried with pumpkin like these pumpkin fritters from Simply Delicious, I might just make out with you. I think it’s a fact that waking up on the right side of the bed is only possible when something sweet and fried is waiting to be eaten.

7. Pumpkin Pie French Toast

Apparently we are disguising pie as breakfast now, and I love it. Pumpkin pie French toast from Closet Cooking is the pumpkin dessert-for-breakfast I’ll be dreaming about waking up to until December.

8. Pumpkin Scones With Icing

You can never have too many scones on the breakfast table... especially pumpkin scones. This recipe from Damn Delicious means you never have to be without.

9. Pumpkin Spice Chocolate Chunk Muffins

The only thing that can make a pumpkin breakfast better is the addition of chocolate — as long as they are large, delicious chunks of chocolate just like the ones in these muffins from Table for Two. It really might as well be a breakfast cupcake.

10. Cream Cheese-Filled Pumpkin Bread

Can you even imagine the decadence in every bite of this cream cheese-filled pumpkin bread from Averie Cooks? I am definitely swooning in my chair right now. This pumpkin bread would become breakfast, lunch, and dinner for me every single day.

When you want to indulge in a pumpkin breakfast, and want to feel a little healthy, turn to these whole grain pumpkin spice waffles from Cookie + Kate. They have the whole grain to make you feel like you’re being healthy, yet are still a bit indulgent. Yes, this means you can have seconds. And thirds.

12. Sour Cream Pumpkin Coffee Cake

A cup of coffee, a slice of moist coffee cake, and the newspaper — this is exactly how I want to start every morning in bed. Closet Cooking’s pumpkin coffee cake can make that dream a reality this fall. Who’s ready to snuggle up with me?

There’s no better way to start a fall morning than with a pumpkin breakfast. Now I’m ready to get to bed just so I can be that much closer to breakfast tomorrow morning!
