15 Delicious Vegan Pumpkin Recipes To Get You In The (Cruelty-Free) Fall Spirit
Even though it's still hot AF here in New York City, it's apparently already pumpkin spice latte season. The signature drink is now available at Starbucks, and the Bustle office has been flooded with samples of everything from pumpkin spice Oreos to pumpkin spice pancake mix. While I've been a little bit of a fall curmudgeon so far — it's just too soon! — I did finally break down and have some pumpkin spice tea today, and I have to admit, it was mighty cozy. While we've already shared the best way to make a vegan pumpkin spice latte in your home, fall brings a whole bunch of other delicious vegan pumpkin recipes that shouldn't be missed — and I have to admit, as a pumpkin-enthusiast, I'm suddenly feeling the fall spirit.
Vegan pumpkin desserts have got to be my absolute favorite thing to bake. I found a great recipe for a vegan pumpkin pie last year and made it as many times as I could before spring sprung (and once after that). Even better, most of these recipes happen to be pretty healthy — pumpkin spice offers a host of health benefits, and because these recipes are vegan and (mostly) not-too-sweet, you can actually be both cozy and not in a sugar coma when you eat them.
Read on for 15 vegan pumpkin-based recipes that will have you drooling in no time.
1. Creamy No-Bake Pumpkin Pie
This is the pumpkin pie I've made multiple times now, and it goes fast. I adapt The Minimalist Baker's raw pumpkin pie pie recipe based on a happy accident: I make and half-bake a regular crust, pour in the chilled pumpkin filling, and then finish baking the crust for just 10 minutes, letting the pie sit in the fridge overnight. The result is a sort of half-cooked, half-raw pie, and it's f-ing delicious. Raw on its own is great too, of course.
2. Pumpkin-Stuffed Cookies
I'm a sucker for anything that looks as bizarre as this. A pumpkin pie stuffed in a chocolate cookie? Why yes, Chocolate Covered Katie, don't mind if I do.
3. Pumpkin Coconut Curry
A pumpkin curry is always my favorite kind of curry. But curry is also one of those things I'm always too lazy to make — even though it isn't actually that hard. Luckily, my dude is the cook and I'm the baker, so I'll be having him make this pumpkin coconut curry from Love & Lemons real soon.
4. Pumpkin Baked French Toast
This recipe from Chocolate Covered Katie uses silken tofu instead of eggs and goes straight in the oven. Like most of her recipes, it's somewhat unusual and (I'm betting) tasty and healthy as hell.
5. Pumpkin & Black Bean Quesadillas
Yes, you can make quesadillas with things besides cheese! One delicious place to start? Pumpkin puree and beans, with this easy recipe from Fo Reals Life.
6. Pumpkin Currant Bread
Moist pumpkin bread is right up there for me with licking chocolate cake batter off a spoon, which is saying something. This one from Minimalist Baker shouldn't disappoint — and remember, if you like your desserts less sweet like I do, just go slowly and taste as you go before you add the suggested amount of sugar.
7. Creamy Pumpkin Penne
8. Pumpkin Spice Pancakes
9. Pumpkin Cornbread Waffles
As soon as I get a waffle iron and start adulting, these pumpkin cornbread waffles from Minimalist Baker are first up. Such a solid combo.
10. Flourless Pumpkin Muffins
Now, these just look so weird I have to try them. I love desserts that also double as healthy breakfasts and taste like raw cookie dough. This recipe from Chocolate Covered Katie (made with white beans!) seems to hit all three notes.
11. Pumpkin Sage Biscuits
These Minimalist Baker biscuits are the things that vegan food porn dreams are made of.
12. Pumpkin Peanut Butter
This sounds weird, but how can two of the best things ever being mixed together be bad? Like chocolate and peanut butter, this simple recipe from Chocolate Covered Katie would be awesome on toast.
13. Pumpkin Gingerbread Smoothie
There's no rule that smoothies have to end with fall, and until I saw this recipe, I have to confess I'd never thought of making a pumpkin smoothie. But, duh. This one from Oh She Glows looks like a glorified milkshake — as a smoothie should be.
14. Pumpkin Gnocchi With Spicy Pepita Pesto
Pumpkin gnocchi is the perfect thing to make with that little bit of leftover pumpkin puree in the fridge — it's so easy and fun that even I cross over into non-baking territory to make it. This variation with spicy pepita pesto from Fo Reals Life looks bomb.
15. Easy Vegan PSL
Obviously, no list of vegan pumpkin recipes would be complete without the PSL. This one from FO Reals Life is straightforward and lets you sweeten to your liking. *Cozy*
