I have a deep and abiding love for all forms of sweetened, fried dough. As such, it comes as absolutely no surprise that the newest addition to my “Things I Must Eat Posthaste” list is something called a funnel cake cupcake. As you might expect, it’s a cupcake… topped with a tiny, adorable funnel cake... and I need one. Now.
Unfortunately I am not able to eat one right at this very moment; the confection in question comes from My Delight Cupcakery, which is located in Ontario, California — as well as 3,000 miles away from me and my Tri-State Area home base. Also, it’s not Friday; apparently these delightful treats are only available on Fridays throughout the month of September. But no matter! I can still dream! From the photo the cupcakery posted on their Instagram feed, it looks like the cupcakes are vanilla-flavored, with a layer of vanilla frosting between the cake itself and the funnel cake topped. A dollop of fruit preserves — strawberry, perhaps? — finishes the whole thing off, and dare I say, it is one of the most magnificent cupcakes I’ve ever seen. Well done, My Delight. Well done, indeed. It’s worth noting that although funnel cake is generally acknowledged as the be-all, end-all of state fair foods (or maybe that’s just me), alas, My Delight will not be putting in an appearance at the LA Fair. As per their Facebook announcement, funnel cake cupcakes will be available exclusively at their storefront; if you want one, you’ll have to hurry on over there sometime in the next few weeks to snag it. For the curious, other available flavors include Caramel Appel, Strawberry Lemonade, and gluten-free Chocolate Caramel.
If, however, you are like myself and live far enough away from Southern California that it’s nigh on impossible for you to travel there soon, here’s the next best thing: A DIY recipe so you can make your very own funnel cake cupcakes at home. And if cupcakes aren’t your thing, but you adore regular-sized cakes? I’ve got you covered there, too. Of course, if you also, like myself, have a deep-seated fear of vats of hot oil, you’ll have to get over it first; you can’t make funnel cakes without a fryer. I’m pretty sure it’ll be worth it, though.
Now if you’ll excuse me, I have to go find something with which to wipe all the drool off my keyboard. It’s just a tiny bit embarrassing.
