Ingredients:

  • 1 can diced pineapple
  • 1 small tomato
  • 1/4 sweet onion
  • 1/2 can black beans
  • Salt, pepper, and oregano
  • 1 tablespoon olive oil
  • Fresh cilantro

If you want a "soupy" salsa, leave some of the pineapple juice and black bean liquid. If you want a chunkier salsa, strain both the pineapples and black beans before starting.

1. Dice the tomato.

2. Dice the onion. You can use less if you're not a fan of onion.

3. Toss all the ingredients into a large bowl, along with some fresh cilantro. Adjust the salt, pepper, and spices according to your preference.

4. Garnish with more fresh cilantro and serve with tortilla chips. Easy peasy.
